[ravioli bake]

I found and made this recipe on one of my favorite *daily* blogs to read 🙂 It turned out heavenly!  I altered a few things to our preference at home.
1 (20 oz) package of cheese ravioli
4 to 5 green onions, chopped
1 (15oz) can of black beans, drained and rinsed
 1 (8 oz) can tomato sauce
1 cup corn
(1 oz) packet of taco seasoning
1 cup cheddar cheese, shredded
Preheat oven to 425 degrees.
Grease an 8×8 baking dish – set aside.
Bring a large pot of water to a boil.
Cook raviolis about 5-6 minutes.
Drain water and hold raviolis.
In a mixing bowl, combine green onions, beans, tomato sauce, corn and taco seasoning.
Pour cooked ravioli across bottom of prepared baking dish.
Pour the mixture on top of raviolis.
Sprinkle cheese & green onion then bake about 20 minutes.
The casserole’s cheese should be melted and bubby 🙂
Remove from oven and serve.

Happy Monday! I’m recapping last week and I’ve got lots of pictures to show for it 🙂 I’ve noticed my posts on this blog have consisted more of a ‘Life Lately’ vibe – and I’m enjoying every post 🙂 
Monday was a rough work day and I feel confident in stating that we’ve all been there where Monday seriously sucks. It is me, or does it seem like if a crappy event happens, it falls on a Monday? Well, Tuesdays are just as yucky for me!
After work, C and I grabbed a rotisserie chicken for dinner, came home and watched Sunday nights episode of The Walking Dead. Nothing too exciting here lol.
Tuesday was a normal work day with a pleasant surprise. C grabbed me flowers to brighten up  my office, which are pictured below 🙂 Super thankful for such a sweet man and his kind gestures 🙂 Not sure what I did to deserve him..
 After work, C and I went on a 3 mile walk around Carmel Mountain Ranch to give my knees a break. I had a hard time just walking because I wanted to jog, but knew the pain in my knees could use a break from running. Afterwards, C and I went to Nekter for dinner 🙂

Wednesday I worked 2 hours from home then logged off for the rest of the day. I didn’t feel well and used the remainder of Wednesday to rest, sleep and relax. Sometimes its just what your body needs to feel better. Because of this, I have a total of zero pictures 😉
Thursday 3.24 was Danielle’s 30th birthday. I’ve known this pretty lady since we were 15 year old sophomores in high school 🙂 Now, she’s a mommy to a beautiful 4 month old baby girl named Abigail Jean.
Time passing (snail or rabbit paced) is a concept that continues to amaze me.

After work, I went on an incredible, long run while C went to the gym. With the time change, I’m able to run a tad longer and later without having to race home before the sun sets. We grabbed dinner, watched Grey’s Anatomy, grabbed showers then called it a night. Zzz.

Around 5am on Friday morning, a car slowly exited our apartment complex while blaring rap music. It instantly woke me up. Thanks, genius. I didn’t fall back asleep until 20 minutes before my alarm went off. Because of this, I woke up late, tired and grouchy 😦 We were late to work because we had to take the dog to day camp. I struggled through the work day then left work early to get adjusted by Dr. McKnight in the afternoon. We picked Zodi up from daycamp then headed home to finish the rest of the work day remotely. We had Rubios for dinner, watched Mokingjay Part 2 and got to bed early.

Saturday morning I went on a run while C went to the gym. (Notice the pattern here?) 😉
Afterwards, I went to my moms house with lunch and spent the afternoon visiting with her. It was a nice, relaxing afternoon after a hot, tiring run. C and I went grocery shopping Saturday night before grabbing Islands to go. We watched the movie Meet The Parents before heading to sleep for the night.
EASTER SUNDAY was such a happy day! We started the morning at my mom’s house for brunch then headed to my dad’s house for dinner 🙂

Another closing to a great yet rough week. Tonight, we will exercise after work/before dinner. I’ll go for a jog while C goes to the gym in our complex. I’m dreading a dental appointment scheduled for tomorrow morning where I’m having a temporary crown put on 😦 I ate all the candy in the world when I was a kid and am still paying for it as an adult. It’s getting harder and busier to post, but I’ll try to keep up with it because I really want to document my life now to reflect on in the future 🙂 Until my next post xx

[3.17 – 3.20]

Thursday was St. Patrick’s Day and I came to work in all black.
I totally knew it was ‘wear green today’ when I woke up in the morning. But then my morning happened:
-morning pee
-weigh in (after peeing of course)
-brush & floss teeth
-pick out clothes to wear (because I save everything for the last minute)
-figure out what to do with hair frizz central 
-make up
-feed the dog
-grab breakfast 
-and the list goes on… 
…which is how I forgot to remember the green 💚
I’ve been getting adjusted once per week for over 3 months – and I love it. By Thursday, my body is basically shutting down and in need of a back cracking. I had my weekly appointment Thursday after work followed by a tortuous run: I felt as if I was running in water and couldn’t go faster. I’ve decided to blame this on the time change because I basically fail at all aspects of life when I don’t get enough sleep. This worries me ten-fold for when I am a new mother in the future. And no, I’m not pregnant.

It wasn’t easy, but we pushed through and finished our run. Of course grumbling most of the way 😉
Afterwards, we grabbed a healthy dinner (Panda Express) and headed home to watch Grey’s Anatomy. Thursdays are my absolute favorite day of the week because the next day is always Friday 🙂

Friday, I took personal time off work and enjoyed the afternoon with my mom. We got our nails done and went to dinner with C and Jimmy. One guess where we went out to eat 😉

On Saturday, C and I went to UTC mall followed by dinner at PF Changs. My dad, Michelle and brother joined us. Again, I wasn’t as camera crazy this weekend as usual so I have no pics from Saturday night 😦
I went for a run on Sunday morning while C went to the gym. No surprise there. We did laundry, picked up the house, did some cleaning and relaxed before picking up C’s momma at the airport.

[life lately]

Time has been speeding by faster than I can keep up, but luckily I’ve been taking pictures 🙂 Here is Life Lately 🙂

On Wednesday night, Jamie and I went to dinner at Islands. I wasn’t feeling good during the day, but seeing her turned my rough day into a great night 🙂 When I see her, we pick right back up where we left off and always end up laughing. We’ve been friends for 27+ years and I’ve learned I can always count on her. I’m able to be myself around her, which is true friendship 🙂

I brought C a burger and fries home from Islands. My mouth is watering.

Wednesday was a normal work day followed by McKnight at 4pm and a run 🙂 The only picture I have is from work (lol):

Friday was amazing because it rained most of the day (a favorite of mine) and then we went to El Comal for dinner with my parents 🙂 It was such a fun date night!

On Saturday morning, C and I went on a longer run than usual. It was hard, but so rewarding when we got home. It even rained on us while on Twin Peaks Rd.
I was with my babe, running in the rain on a Saturday morning. Four things that I absolutely LOVE 🙂

After our run, we headed home so C could grab a shower and get ready for his haircut at 10am. I prepared some protein drinks for us since we decided to make breakfast after his haircut.
At the last minute, we decided to bring Noni with us. She and I waited in the car until C was done with his appointment 🙂

After a few other errands in Carmel Mountain, we were starving. We headed home and made breakfast for lunch lol.
After eating, we decided to take it easy and do nothing for the rest of the night.  Just because we could 🙂 With no plans and no kids – its easy to go into relaxation mode. Especially after an early AM run and running errands most of the day 🙂
Sunday morning we had brunch with Nana (C’s grandma). She’s a really cute grandma and we had the best time. I forgot to take pictures (oops).
After breakfast we went grocery shopping and went for a bike ride on the 56 highway.

After the bike ride which COMPLETELY WORE ME OUT, we went to Rubios for dinner then home. I painted my nails, grabbed a shower and then we passed out.

[just relax]

This weekend was one of those where I allowed myself to fully relax. Naps, lounging around and aimlessly putzing around our home. I usually start giving myself a severe guilt trip if I haven’t done anything to be super productive, but this weekend I didn’t! It was needed and felt nice, but you better believe I was back on track come Monday morning 😉
Friday night we ran home to get ready for dinner at El Comal 🙂 Zodi was at doggie daycamp all day, so she was perfectly content with sleeping while we were at dinner.

Saturday morning, C went to the gym while I took my locks a little darker. This was the first Saturday morning in a while where I didn’t run in the AM. It felt weird, but definitely relaxing. I felt a little guilty while being pampered in the hair color chair, but kept telling myself: just relax!

After my hair appointment, we grabbed lunch at Rubios then headed home to do nothing before dinner with my Uncle and Aunt. We watched Netflix, did some laundry and I took a tiny 20 minute nap.

I have zero pictures from Sunday because absolutely nothing ‘picture worthy’ happened. We made breakfast, washed our bed sheets, grabbed Islands for dinner and crawled into bed early. The Walking Dead was probably the most excitement in our day 🙂
Come Monday, it was pouring rain with lightening and dark blue clouds filling up Poway’s sky. I (of course) took many sky pics via snapchat when I needed a break from work. #guilty

My absolute favorite part of Monday was our evening run.

About 1/2 way into our route, the sky began to pour. I’m not talking a mere drizzle or sprinkle here. FULL ON TORRENTIAL RAINPOUR.
It was exhilarating. It was refreshing. Yes, it was freezing, but we didn’t care.
Talk about living in the moment and enjoying what God gives us! I was happy, smiling, with C, on a run and on Cloud 9. I will never forget that amazing memory.

We couldn’t figure out what to do for dinner, so we decided to grab a smoothie at Nekter with our protein shakes from home 🙂 Sounds good to me!

Tonight, we plan to make this recipe with cornbread and enjoy a cozy evening at home. I imagine we will just relax after a long day’s work 😉  xx
